Avocado & Cilantro Hummus Party Dip

Smooth and creamy, this dip is inexpensive and easy to prepare. Bring it to that swiftly approaching potluck or serve it at your next soirée. Pair this deliciously healthy dip with corn chips, fresh veggies or spread it on sandwiches or burger buns.

The past week in Toronto has been chockablock with celebration. With 2014 World Pride, FIFA games, Strawberry Festivals and Canada Day, we have indulged in BBQ and ‘beverages’. Most importantly, laughter has been plentiful.

To my fellow Canadian readers, I hope that you too were able to take part in some of these festivities that represent just how beautiful, diverse and  inclusive our country is.

To my amazing American neighbors, I wish you a very happy 4th of July!

Avocado & Cilantro Hummus Party Dip

Prep Time: 10 minutes      Yields: Approx. 1 cup + worth      Author: Milk & Marigolds

Ingredients:
1 avocado
2 cloves of garlic, chopped
1½ cups of precooked (canned) chickpeas
½ teaspoon of salt
Juice from ½ a lemon
1 teaspoon of tahini
1 tablespoons worth of chopped (fresh) cilantro
1 tablespoon extra virgin olive oil

Garnish:
⅓ cup of precooked chickpeas
½ teaspoon of paprika
1 teaspoon of chopped (fresh) cilantro

Tools:
Blender or Food processor

Instructions:

1. In a blender or food processor, add all ingredients except for the garnish. Blend until smooth and creamy.

2. Garnish with the whole chickpeas, paprika and fresh cilantro.

Tips:
Add some kick by shaking in some cayenne pepper. Add half of another avocado to make it creamier. What is tahini? Tahini is a paste made from ground up hulled sesame seeds. You can find it in most health food or specialty stores.
